It does answer the question, but I'll still continue to use ricotta - I like the taste of it. Cottage cheese - eh. When I make lasagna, I mix the ricotta with shredded mozzarella, and can eat it by the spoonful!
The family too, insists I don't change a thing about my lasagna recipe - which is funny, because I don't follow a recipe. It's on the menu actually, for Christmas dinner. We're doing a buffet type dinner with Italian-style foods.

I've never had cottage cheese, that I know of. The last time I made lasagna I did use ricotta for the very first time. I didn't like how thick it was, and how hard it was to spread. Recently saw a video where they said to just drop it in and it will melt and spread on its own. Might try it again ... or not.

Steppet snacks on cottage cheese. She puts pepper on it and snacks straight out of the container. The Dr told her that it's okay but she should be using the low fat version. I'll get her one so she can try it out.

Oh, you've gotta put an egg in it. Well, you don't have to, but lots of recipes call for it; I put an egg in mine. You mix your cheese mixture - ricotta and mozzarella - and an egg in a bowl - it makes the ricotta creamier. You still have to glop it on, but it's not as thick.
Note: if you are like me, and I realize few people are(!), eat your spoonful of ricotta and mozzarella before adding the egg. Like raw cookie dough, it's not advisable to eat stuff with raw eggs in it.
Steppette's halfway in the direction in which I like cottage cheese - lots of pepper. Fresh tomatoes from the garden, sliced thick, with a plop of cottage cheese on top and lots of pepper - Summertime Bliss!!!
I only like small curd cottage cheese though. Large or medium curd is just too..curdy for my taste; it's a texture thing. Breakstone's small curd 2% milkfat cottage cheese is the best! It also comes in single serving cups which is great to take to work with a container of sliced tomatoes for my summertime blissful lunch.
Mom and Dad too! Cottage cheese was almost a staple with dinner in our family in the summer, especially when tomatoes were in season. Often times though, it was with peaches or pineapple.

I just saw a recipe that called for both ricotta and cottage cheese. I’m wondering if that’s for people who don’t eat eggs? I’m sure it’s to soften the ricotta.

I went grocery shopping yesterday for Christmas Eve dinner (meatballs) and Christmas dinner (lasagna). The store was a nightmare to navigate there were so many people there!
When I was thinking about what to have for Christmas dinner, I decided to make lasagna because it was "something different"; we usually have ham or turkey on Christmas.
Apparently, many others had this same idea! All kinds of brands of pasta at the store, and I got the very last box of lasagna noodles on the shelf!!!!

I could stay in this thread, and never run out of things to ramble on about.
Had dinner at a friend's a couple of weeks ago, and she made a wonderfully delicious dish with artichokes and shrimp. It was wonderfully simple to make too, so I decided to make it at home with chicken instead of shrimp.
I was preparing everything to make the dish last night, and when I opened the package of chicken breasts, had a WTF? moment. One of the chicken pieces, hidden under the others so it was unseen through the plastic wrap, was grayish - not pinkish-gray, but greenish-gray.
Grrrr! I threw the whole package away.
We had tomato soup and grilled cheese sandwiches instead.

It's getting to the point where you have to open everything up and check it out before buying. People have even bought items thinking inside is what's on the cover of the box, and finding a jar of spaghetti sauce or rock. Not a good thing to have to worry about spoiled food being packaged in with good food. They're even stuffing meat with water to plump it up, and spraying with stuff that has spoiled food keep the color of good food. I've tore open ground beef, pretty and pink on the outside, and dark on the inside. It's a sad state the world is becoming.

I guess I expect - not often, but every now and then - to get a package of "bad" meat; it's happened in the past, but it's been a long time. It's especially irritating though, when you've got half the meal prepared before you discover it!
Last night we made a big pot of chili with ground turkey, frozen tomatoes from last summer's garden, peppers, corn, black and white beans, spinach, and onions. Sour cream and cheddar cheese toppings. Yum!!!

We had a simple dinner last night - creamy tomato soup with rotini pasta, spinach, and grated Asiago cheese. It was one of those 'use up whatever is left in the fridge' dinners - the rotini was already cooked, the Asiago was the tail end of a wedge with just enough left for a sprinkle on top of each soup bowl, and the baby spinach leaves were the last handful in the container.
I was finishing folding a load of laundry, so Hubs got dinner started. He put the pasta, the soup, and spinach in a pan on the stove and was busy grating the cheese when I walked by the stove, and gave the soup a stir. It looked weird. The spinach looked weird - it was the deep green color of spinach, but there was also a lot of light green and purple mixed in. Rotten spinach? No, I'm sure Hubs would have noticed if it was rotten before putting it in the pan.
Then it dawned on me. I opened the fridge, and sure enough the container with the last bit of spinach was still there with its big label that says "Baby Spinach". Next to it was the container with the label that says "Spinach and Butter Lettuce Mix".
I've never had soup with lettuce in it before. I never hope to have it again.

I don't know what that is, but imagine it's danged good!
I love having leftovers; I know some people who won't even touch them! Casseroles and soups made perfect leftovers - and this time of year, they are the perfect comfort food for cold winter days.
I just put on a big pot of 15-bean and Andouille sausage soup to simmer for a few hours. Yum!
