My first "Christmas cooking" of the season done tonight...chicken salad with red grapes, green onions, sliced almonds, and a little of this & that seasonings. A request at work for the Christmas dinner tomorrow.
The chicken salad is easy. I buy one of those 2.5 lb bags of chicken tenders. Boil them til done, cut up and mix with Hellman's, green onion, parsley, celery seed ('cause I don't like raw celery), salt, pepper, the almonds (or pecans), and grapes. Very easy and pretty for Christmas with the red and green!
I'm so glad you mentioned making it; the timing of your post was perfect. I made it late last night for today's party - it was way easier and quicker than the pear bread. Gave Hubs a sample on a cracked pepper cracker, and it met with his approval. Actually, he declared "this is the sh!t!"
I had to push him out of the kitchen for fear he'd eat too much of the salad and crackers, and I wouldn't have any left to take to the party today.
Yes! Glad the chicken salad was a success!! It's one of the easiest and prettiest dishes for a crowd-pleaser. And I especially like the rating of "It's the sh!t!" That's top billing!
"It's the Sh!t Q's Chicken Salad" was so much of a hit, I not only have to make it for the Solstice Celebration I'm going to this week, I now have to make it for Hubs' office luncheon! (Just polished off the remainder of the first batch on a flat bagel - yum!)

Gams, please tell Q that I made her "It's The S**t" chicken salad tonight, and later remembered why I make it so rarely. I ate so much, I nearly made myself sick! It is so, so good. Thanks for the recipe!

It's a place to start.
First, see which recipe has the same amount of chicken. Then see what other ingredients they use that Q also uses, and use that amount for that ingredient. Search other recipes for other ingredients, and then you'll have a place in which to start. Then go from there. Increase or decrease ingredients the next time.
Or, if Q doesn't pop in, ask Phalon & Siren for the list of amounts they came up with.

BOLL! This really is not that complicated.
In the absence of the original authoress, here's the substandard version.
You use enough chicken to make enough of the salad you wish to make.
Then put enough chopped green onions in to taste them but not make the salad too oniony.
Enough celery for crunch. Enough slivered almonds (or nuts of choice) to be able to taste them but not so much that it tastes too nutty. Don't overwhelm it with too many grapes - we are not making jelly. Salt and pepper to taste. A blob or two of mayo and mix. Not creamy enough for your liking? Add another blob or maybe two of mayo.
Seriously. Is there a recipe with specific measurements for the ingredients for tuna salad for sandwiches?
Or do you use your eyeballs and maybe a taste-test or two? This is pretty much the same thing.

Hee hee! Thank you for being more specific, Gams. I used pecans in my salad, since that's what I had. I think red grapes are sweeter, but I used white this time, because that's what I had. Since I was making enough salad to share, I used two 12.5 oz cans of chicken breast, well-drained. I added about 2/3 of a15 oz jar of mayo. But the amount of mayo needed depends on how many grapes you put in. I don't like celery, so I used celery seeds (to taste). I used dried parsley, though fresh would look prettier if you're taking the salad to a gathering. I mix the nuts, chicken, and grapes together first. Then, I mixed the celery seed and parsley into the mayo before mixing that into the chicken mixture. With all the nuts and mayo, this is definitely not diet food. But it is a wonderful treat. I appreciate the additional information. Being a guy, I am more accustomed to specific quantities. For instance, you do not just put oil in a car or a lawn mower. You put in the specific amount the task requires. Two quarts when you need five is a really bad idea. Five quarts of oil in a 4 quart vehicle is also ungood. And lets face it, the only time you don't do maintenance on a lawn mower is when you are ready to replace it. Again, proper quantities! All guys know this intuitively and prefer discussing these important matters in the testosterone temple. (With appropriately cold liquid refreshments when ever possible.)
It's actually a bit shocking to find out that when people 'cook', when they make fuel for incredible cellular factory we call our bodies, the architect of the fuel measures quantities in a less than precise fashion! Please don't misunderstand. I have partaken in more than one repast which I considered a marvel of manipulation and told the host she had a singular gift and that I was impressed beyond words at the display of culinary talent. But how in the name of all that's holy someone can cook by measuring ingredients by the pinch, sprinkle, dash, or "to taste", completely escapes me. Mom did it, and I never understood how it was possible. Even today when I glace at her favorite old recipes, the hand written ones have imprecise instructions, and as such they are impossible to duplicate. Sigh. I'm sure I could show her Sista Q's original post and she'd whip it up in a snap. I'm afraid that without precise measurements, I'm relegated to reading posts about how good someone thinks something is which leads me to the point of the ramble. Sometimes, life isn’t fair.

Okay. This is NOT Q's recipe. It's one I made up from searching various recipes from my link above. Follow it, or play around with it as you please:
2.5 lb bags of chicken tenders or 6 to 6-1/2 cups chicken meat, cooked & cut up as desired 1/2 to 3/4 cup of Mayonnaise 1/2 to 1-1/2 cups green onions/scallions 1/4 cup fresh parsley, chopped up -or- 4 teaspoons dried parsley 1 to 2 cups celery -or- 1 to 2 teaspoons celery seed 1 to 2 cups seedless grapes, quartered or halved, or whole, as desired 1/2 to 2 cups nuts, chopped or whole, as desired salt & pepper to taste
Cook chicken as desired: boil, bake, grill, fry, broil ... whatever. Mix in the other ingredients in order given, or as desired.
Okay, guys. You can start there and see how that works. Increase/decrease ingredients as desired. You can start with the least amount, and eyeball it or taste it to see if you think it could use more. Add half or the rest of the amount given. Or even add more than I listed.
Let me know how it worked out.

Of course you have to ‘stir’ it – it takes mayonnaise. Even I know you can’t leave that as just an unmixed glob. Her sh!t chicken salad really would be that if you didn’t stir it!
Q! If I send you Tupperware can you send us some made-by-the-chef-herself salad? It’ll keep for a few days in our summer heat while being mailed? Right?
Sigh. I’ll ask again this winter.

I am truly honored that a whole thread was created about my chicken salad, especially while I was in "prodigal" mode! I will try to come up with some exact numbers for my kitchen warriors who are less knowledgeable with the amounts associated with terms such as "pinch", "smidgen" "a bit" and so on. However, it's 3 AM and my brain turned off about two hours ago. It's a long weekend and I promise to return with the intel! Over & out for now!

Looks a lot like Q's It's the Sh!t Chicken Salad...which I've been thinking about lately (yum!). It's been so hot and humid, we've been eating cold sandwiches or salads for dinner every night. I don't feel like eating anything hot, much less cook anything in this heat; Hubs doesn't even feel like grilling either.

... hmm ... I just had a thought. Can you substitute cherries for the grapes? Or are there any other fruit that could replace the grapes? Cranberries? Of course, any fruit with pits/seeds would make the recipe more complicated.

OMG, that looks good! I'd been thinking about making Q's chicken salad recently - it was so hot and humid, all we ate was cold dinners for a couple of weeks, but even cooking the chicken to make the chicken salad was unappealing.
Now that it's cooled down, it'd be the perfect time to make it - but cr@p!, I went grocery shopping yesterday, and completely forgot about it!
